Applied Studio were asked to renovate Brindisa’s existing deli in Balham. The brief was to completely change how customer’s interacted with the shop, it’s goods and the staff. It’s an informal setting where customer’s are encouraged to browse but also take advantage of the staff’s wealth of knowledge. It’s an introduction to exceptional quality, authentic Spanish food.
The counter is an “informal” kitchen table, rather than a solid barrier between the staff and customer.
It is a collection of tables and reclaimed storage units. It can pull apart to provide seating or to reconfigure the space for events. It’s the heart of the shop just as the kitchen table is the heart of the home. It’s a celebration of amazing food and about building relationships around that food.
